White & yellow teas

White tea is the least processed of all: neither rolled, nor heated, nor oxidized; it is simply plucked, withered, and dried. The infusion is very pale, with a silky texture and notes of fresh hay, white flowers, and almond.

It is also the most subtle, and the most expensive per kilo.

Our blends often combine it with green tea.

The green tea provides the vegetal structure that white tea lacks on its own, and the white tea brings the length and sweetness that green tea lacks.

Both are infused in the same temperature water, around 75°C, for the same short amount of time—without one overpowering the other.

With a pure white tea, a slightly assertive aroma would mask everything; in this duo, it settles in.

The only risk: water that is too hot, above 80°C; the finesse vanishes and bitterness takes its place.

Étoile du Berger — Vanilla, orange, cardamom, star anise, clove: the only one in the collection made with pure white tea. The spices dominate, the vanilla rounds them out, and the base remains light enough to distinguish them one by one.

Perle Blanche — Lychee, strawberry, rose, and juniper on white and green tea. A blend that favors restraint over indulgence—the lychee is subtle, not invasive. Even cleaner when served cold.

Panier Fleuri — Rosemary, lavender, lemon, and cornflower: a concentrate of Provence on white and green tea. The rosemary provides depth, the lavender a lingering finish, and the lemon freshness. Cicadas in winter.

We also add a yellow tea, Huang Da Cha.

A rare family: a green tea that has undergone a steaming stage to remove its herbaceous quality, replacing it with notes of toasted grain and chestnut, with a slightly sweet finish and no trace of bitterness.

Huang Da Cha, in particular, has a smoky-roasted character that comes from its prolonged firing. It is a noticeably darker and more roasted tea than other yellow teas, to the point of sometimes being mistaken for a light oolong.

These teas come from the tea plant and therefore contain theine (caffeine). Their consumption should be moderated late in the day, as well as for pregnant or breastfeeding women and children. Our rooibos and herbal infusions do not contain any.
